E1442 - Hydroxypropyl Distarch Phosphate

Hydroxypropyl distarch phosphate (E1442) is a modified tapioca starch commonly used as a food additive in various food products. The starch tastes great and has excellent transparency after being heated and gelatinized. It is derived from tapioca starch and is modified through a chemical process involving the addition of hydroxypropyl groups and phosphate groups to the starch molecules.

Functional uses

  • Enhance adhesion, minimizing starch loss; enhance rehydration properties, reducing cooking or brewing time;
  • Boost product toughness and elasticity for a smoother and chewier taste.
  • Decrease oil absorption rates, prolong shelf life; higher oil absorption and water capacity, facilitating subsequent processes and cost management.

Applications

  • Used in breads and cakes to improve moisture retention and anti-aging.
  • Used in tapioca balls, it has a lower gelatinization temperature so that the product can be gelatinized at a relatively low temperature and can absorb.
  • Used in Mayonnaise
